Hearty Butternut Soup Recipe’


30ml Olive/canola  oil

2 Onions, finely chopped

A handful of spring onion

1 Medium – Large l Butternut, diced

1 tsp  Curry powder

Pinch nutmeg/cumin

3 cups Chicken stock, low sodium or dissolve a stock cube 1-2 in water to use as stock

Pinch of salt & pepper

Some plain yoghurt &Parsely to Garnish



  • Sauté the onions in the olive oil, once translucent add the butternut and spring onion and sauté for about 3 minutes.
  • Stir curry powder and cumin/nutmeg ,pinch of salt & pepper
  • Add the chicken stock/ homemade allow to simmer for 20 – 25 minutes or until the vegetables are soft.
  • Place into a blender & blend, serve and enjoy. Can add a drizzle of plain yoghurt as garnish with some parsley.
